2 medium zucchini
1/2 lemon, juiced
3 tablespoons olive oil
2 teaspoons minced fresh thyme
Kosher salt and freshly ground black pepper
Parmesan cheese, for shaving
1 baguette, sliced, for serving
Shave the zucchini lengthwise with a sharp vegetable peeler to make very thin slices.
Remove the first slice, which has a very dark green skin. Place the pieces on a plate, overlapping them.
Put the lemon juice, olive oil, thyme, salt, and pepper in a small jar or bowl.
Cover and shake well or whisk to blend. Pour the mixture over the zucchini slices in an equal layer. Allow for at least 15 minutes, and up to an hour.
Shave thin pieces of Parmesan over the zucchini with a vegetable peeler and serve with baguette pieces.
