Apple and cucumber gin cocktail

Ingredients

  • 16 slices cucumber (peel on), plus some peeled into ribbons
  • 8 fresh mint sprigs, leaves only, plus extra sprigs to garnish
  • 150ml gin
  • 50ml peach schnapps
  • 1 lime, juiced
  • 800ml apple juice, chilled
  • 1 peach, sliced, to garnish

Directions

  1. In a large jug, combine the cucumber slices and mint leaves with a splash of gin and muddle with a cocktail muddler or the end of a rolling pin until the mint is bruised and the cucumber has broken down.
  2. Combine the remaining gin and peach schnapps in a mixing glass. Stir in the lime and apple juice, then filter into a 1.5-liter bottle.
  3. Before serving, chill for up to 1 day. To serve, garnish with mint sprigs, cucumber ribbons, and peach slices.
