Caramelised bacon and chilli jam sarnies recipe

Ingredients

  • 4 tbsp Tesco Finest chili relish
  • 2 tbsp brown sugar
  • Four rashers dry-cured unsmoked streaky bacon
  • Four slices sourdough
  • One small avocado, stoned and sliced

Method

  1. Preheat the grill to high. Mix 2 tbsp chili relish with the sugar.
  2. Arrange the bacon on a foil-lined grill rack and brush with half the relish and sugar mix.
  3. Grill for 4 mins, then flip over and brush with the remaining relish and sugar mix.
  4. Grill for a further 4–5 mins until sticky and beginning to crisp up, keeping an eye on it to make sure it doesn't burn.
  5. Arrange the avocado over two slices of bread and top with the bacon.
  6. Spread 1 tbsp chili relish on the other slices of bread, then use it on the sandwich.
