Celeriac 'noodles' with XO chilli sauce recipe

Ingredients

  • 2 tbsp vegetable oil
  • 4 slices prosciutto or Parma ham, finely chopped
  • ½ small onion, very finely chopped
  • 3 large garlic cloves, finely chopped
  • 4cm piece ginger, peeled and grated
  • 2 tsp crushed chilies
  • ½ tbsp fish sauce
  • 2 tbsp reduced-salt soy sauce
  • 1 tbsp light brown soft sugar
  • 250g pack pak choi, quartered
  • 400g celeriac, peeled and cut into ribbons with a vegetable peeler
  • 3 spring onions, finely sliced

Directions

  1. In a frying pan over medium heat, heat the oil and fry the prosciutto and onion until the onion is tender and the pork is crisp about 6-7 minutes. Cook, stirring constantly, for 2 minutes after adding the garlic, ginger, and crushed chilies. Cook for 1 minute after adding the fish sauce, soy sauce, sugar, and 3 tbsp water. Take the pan off the heat and set it aside.
  2. A large pot of water should be brought to a boil. Boil for 1 minute after adding the pak choi, then add the celeriac ribbons. Drain after another 30 seconds of boiling. To serve, toss with the XO sauce and sprinkle with the spring onions.
