Chocolate and olive oil mousse recipe

  • 100g bar 70% dark chocolate
  • 2 eggs, separated
  • 20g caster sugar
  • 1 tbsp. olive oil
  • sea salt
  • gold edible glitter, to decorate


  1. In a heatproof dish positioned over a pan of simmering water, melt the chocolate, making sure the water does not touch the bowl. Remove the bowl from the pan and set it aside to cool for a few minutes.
  2. In a mixing bowl, beat the egg whites with a pinch of salt until soft peaks form.
  3. Add the egg yolks to a separate mixing dish with the sugar. Whisk until the mixture is light and fluffy. Pour in the olive oil and whisk it in thoroughly before adding the melted chocolate.
  4. Gently fold in a large spoonful of the egg white into the chocolate mixture, being careful not to overwork the mixture. Gently fold in the remaining egg white until it is thoroughly combined. To set, divide the mixture between two glasses and chill for 1 hour.
  5. 10 minutes before serving, remove the mousses from the fridge. Add a pinch of sea salt and the edible gold glitter to finish.
