Chocolate mini teddy bear pancakes with berries and syrup recipe

Ingredients

  • 175g plain flour
  • 25g cocoa powder
  • 1 tsp baking powder
  • 1 large egg, beaten
  • 250ml milk
  • butter or oil, for frying
  • 200g blueberries
  • golden syrup or maple syrup, for drizzling

Directions

  1. Combine the plain flour, cocoa, and baking powder in a mixing dish. Make a well in the center, crack the egg into it, and beat until smooth, gradually adding the milk.
  2. Preheat the oven to half-gas, 130°C, and 110°C fan. In a frying pan, melt a knob of butter or a little amount of oil and glob in a heaped dessert spoonful of batter, adding small blobs for ears on both sides. Cook for a few minutes over medium heat, or until bubbles develop around the edges of the pancake, then turn and cook for another few minutes, or until puffed. Repeat with the remaining batter, using more butter or oil as required between batches.
  3. Make a separate little glob of pancake for each teddy bear's nose, flipping as above. Warm the cooked pancakes in a low oven while you finish the rest.
  4. Add one of the mini pancakes for a nose, two blueberries for eyes, and a drizzle of syrup to each pancake.
