Duck with five spice roasted cauliflower recipe

Ingredients

  • 350g cauliflower, cut into florets
  • 1 tbsp olive oil
  • 1/2 tsp Chinese five spice
  • 2 duck breasts

Directions

  1. Preheat the oven to 220°C, fan 200°C, gas 7. Bring a pot of salted water to a boil, then drop in the cauliflower florets and cook for 2 minutes before draining. Drizzle the olive oil over the vegetables in a roasting tray, then sprinkle with the Chinese five spice. Toss to evenly coat.
  2. Sprinkle a pinch of salt on the fat of the duck breasts at 2cm (1in) intervals. Heat an ovenproof frying pan to 350°F, then place the duck breasts skin-side down in the pan and cook for 5 minutes, or until golden. Turn the duck breasts over and place the cauliflower roasting dish in the oven.
  3. Roast the duck for 12 minutes if you want it medium done, and 16 minutes if you want it well done. Take the duck out of the oven and set it aside to rest, covered in foil. Return the cauliflower to the oven for another 7 minutes after stirring it.
  4. If desired, serve the duck breasts sliced with cauliflower florets and salad leaves.
