Gingerbread lattes

Ingredients
- 65g light brown sugar
- ¼ tsp ground nutmeg
- 4 black peppercorns
- 1 small cinnamon stick
- 2 tsp ground ginger
- 1 tsp vanilla extract
- 500ml milk
- 200ml freshly made espresso coffee
Directions
- In a saucepan, combine the sugar and 100ml water.
- Gently heat, stirring constantly, until the sugar melts.
- Bring to a boil, then add the ginger, peppercorns, cinnamon, and nutmeg and whisk to combine.
- Allow cooling completely after turning off the heat.
- Using a fine sieve, strain the mixture and add the vanilla extract.
- When ready to serve, heat the milk and syrup in a saucepan until steaming hot but not boiling, stirring frequently with a wire whisk.
- Pour the espresso coffee into four mugs or cups, then cover with foamy milk.
