Gingerbread lattes

Ingredients

  • 65g light brown sugar
  • ¼ tsp ground nutmeg
  • 4 black peppercorns
  • 1 small cinnamon stick
  • 2 tsp ground ginger
  • 1 tsp vanilla extract
  • 500ml milk
  • 200ml freshly made espresso coffee

Directions

  1. In a saucepan, combine the sugar and 100ml water.
  2. Gently heat, stirring constantly, until the sugar melts.
  3. Bring to a boil, then add the ginger, peppercorns, cinnamon, and nutmeg and whisk to combine.
  4. Allow cooling completely after turning off the heat.
  5. Using a fine sieve, strain the mixture and add the vanilla extract.
  6. When ready to serve, heat the milk and syrup in a saucepan until steaming hot but not boiling, stirring frequently with a wire whisk.
  7. Pour the espresso coffee into four mugs or cups, then cover with foamy milk.
