Jungle bird cocktail

Ingredients
- 150ml dark rum
- 50ml Campari
- 2 limes, juiced
- 350ml 100% pure pineapple juice
- ice, to serve
- 4 mint sprigs, to garnish (optional)
Directions
- In a large 750ml cocktail shaker, combine all the ingredients except the ice. Shake vigorously for 1 minute, or until everything is well combined.
- Pour the cocktail mix over ice in four short cocktail glasses; it should settle with a lovely frothy top. If desired, garnish with mint.
Tip: If you don't have a cocktail shaker, create smaller batches in a clean jam jar with a lid, or mix everything together in a large jug - it'll still taste great, but the frothy top won't be as impressive.
