Marinated mozzarella salad

- 150g pack mozzarella
- 50g Tesco Finest basil pesto
- 250g pack Tesco Finest mixed baby tomatoes, halved
- ½ tsp fennel seeds, crushed
- ½ tbsp extra-virgin olive oil
- 10g fresh basil, leaves torn, plus extra to garnish
- 100g vine tomatoes
- ½ lemon, zested
- 2 slices crusty bread, toasted, to serve
- Set aside for 10 minutes to marinate the mozzarella and pesto in a bowl.
- Season the tomatoes with salt, pepper, basil, fennel seeds, and lemon zest.
- Tear the mozzarella and sprinkle the extra basil on top.
- Any pesto that remains in the bowl should be spooned over the toast and served.
