Marinated mozzarella salad

  • 150g pack mozzarella
  • 50g Tesco Finest basil pesto
  • 250g pack Tesco Finest mixed baby tomatoes, halved
  • ½ tsp fennel seeds, crushed
  • ½ tbsp extra-virgin olive oil
  • 10g fresh basil, leaves torn, plus extra to garnish
  • 100g vine tomatoes
  • ½ lemon, zested
  • 2 slices crusty bread, toasted, to serve


  1. Set aside for 10 minutes to marinate the mozzarella and pesto in a bowl.
  2. Season the tomatoes with salt, pepper, basil, fennel seeds, and lemon zest.
  3. Tear the mozzarella and sprinkle the extra basil on top.
  4. Any pesto that remains in the bowl should be spooned over the toast and served.
