Prawns and red peppers with saffron mayo recipe

Ingredients
- 4 slices of ciabatta
- 4 tsp olive oil
- 1 garlic clove, halved
- 90g pack cooked stir-fry king prawns
- 100g roasted red peppers, drained and sliced into thin strips
- 1 tbsp lemon juice
- 1 tbsp finely chopped parsley leaves
- pinch of saffron (4-5 threads)
- 40g mayonnaise
Directions
- Over high heat, heat a griddle pan. Brush 1 tbsp olive oil on each side of the ciabatta slices and toast in the pan, flipping, until golden. The sliced side of the garlic clove should be rubbed on one side of each slice.
- Combine the prawns, peppers, lemon juice, parsley leaves, the remaining olive oil, and some spice in a mixing bowl.
- 1 tbsp boiling water + 1 tbsp saffron + 1 tbsp saffron + 1 tbsp saffron + 1 tbsp saffron + 1 TB Stir well, then set aside to infuse for 2 minutes, stirring often. Mix in the mayonnaise thoroughly.
- With a teaspoon of saffron mayonnaise and two slices of toasted ciabatta per person, serve the prawns and peppers.
