Red velvet brownies recipe

For the brownies

  • 200g dark chocolate
  • 135g milk chocolate
  • 185g slightly salted butter, diced
  • 275g soft light brown sugar
  • 3 eggs
  • about 2 tsp red food coloring (amount will depend on the brand you use)
  • 85g plain flour
  • 40g cocoa powder

For the frosting

  • 150g soft cheese
  • 1 tsp vanilla bean paste
  • 50g icing sugar
  • 50g butter, softened


  1. Preheat the oven to gas 4 (180°C, fan 160°C) and line a square brownie tray or baking tin with nonstick parchment paper.
  2. Chop the dark and milk chocolate into small pieces and put aside 150g for the topping. Place the remaining in a small saucepan with the butter and sugar, and cook, stirring regularly, until melted.
  3. Remove the melted chocolate to a mixing bowl and set it aside to cool somewhat. Remove the pan from the oven and use it to melt the remaining chocolate, then set it aside.
  4. In a mixing bowl, whisk the eggs one at a time into the melted chocolate, then add the red food coloring until the mixture is a deep red color.
  5. Incorporate the flour and cocoa powder in a mixing bowl, fold to combine, and pour into the prepared tin.
  6. Use a toothpick to create a ripple pattern by pouring the melted chocolate from the pan onto the surface of the brownie in four evenly spaced lines.
  7. Bake for 25 minutes on the middle shelf, or a few minutes longer if you prefer harder brownies. Cool for about 10 minutes in the tin before removing and cooling on a wire rack.
  8. Combine the soft cheese, vanilla, icing sugar, and butter in a mixing bowl and beat until light and fluffy. Trim the edges of the brownies and cut them into nine even squares once they've cooled. Once iced, spread the icing with a palette knife and cool.

Tip: To make brownies extra special, cut out hearts from pink or red royal icing with a heart cutter and place one in the center of each decorated brownie.
