Smoked salmon and scrambled egg crumpets recipe

  • 3 Tesco Finest Bluebell Araucana Eggs
  • 10g unsalted butter, plus extra for buttering the toast
  • 4 Tesco Finest Sourdough Crumpets
  • Tesco Finest Scottish Smoked Salmon, sliced
  • a small handful of watercress
  • ½ lemon, juiced
  • chives, finely snipped (to garnish)


  1. Whisk the eggs in a bowl; season.
  2. Melt the butter in a frying pan over medium heat, add the eggs, and scramble with a spatula for 2-3 mins or until cooked to your liking.
  3. Meanwhile, toast, then butter the crumpets and divide between 2 plates.
  4. Top each with a slice of smoked salmon and a small handful of watercress, then squeeze over the lemon juice.
  5. Top with the scrambled eggs and the chives to serve.
