Smoked salmon and scrambled egg crumpets recipe

Ingredients
- 3 Tesco Finest Bluebell Araucana Eggs
- 10g unsalted butter, plus extra for buttering the toast
- 4 Tesco Finest Sourdough Crumpets
- Tesco Finest Scottish Smoked Salmon, sliced
- a small handful of watercress
- ½ lemon, juiced
- chives, finely snipped (to garnish)
Method
- Whisk the eggs in a bowl; season.
- Melt the butter in a frying pan over medium heat, add the eggs, and scramble with a spatula for 2-3 mins or until cooked to your liking.
- Meanwhile, toast, then butter the crumpets and divide between 2 plates.
- Top each with a slice of smoked salmon and a small handful of watercress, then squeeze over the lemon juice.
- Top with the scrambled eggs and the chives to serve.
