Stuffed dates with goat's cheese and almonds recipe

Ingredients

  • 2 tbsp clear honey
  • 5g fresh thyme, leaves picked
  • 400g pack Tesco Finest Medjool and Zamli Dates
  • 32 blanched almonds
  • 100g soft goat’s cheese

Directions

  1. In a small saucepan, warm the honey and the majority of the thyme leaves. Set aside while you prepare the dates with a pinch of salt.
  2. Cut a slit lengthwise into the side of each date using a tiny knife. Remove the stone and replace it with an almond that has been blanched. Spread some goat's cheese into the void, then place on a dish, cheese-side up.
  3. To serve, drizzle with honey and top with a few extra thyme leaves.
