Thai fish parcels recipe

Ingredients
- 360g frozen cod fillets
- 400g frozen leaf spinach
- One yellow pepper, deseeded and sliced
- Two garlic cloves, crushed
- 3cm piece ginger, peeled and grated
- Two limes, one juiced, 1 cut into wedges
- 1 tbsp olive oil
- 240g long-grain rice
- 15g fresh coriander, leaves and stems separated and chopped
Method
- Preheat the oven to gas 6, 200°C, and fan 180°C.
- Place each cod fillet on a large baking paper and divide the spinach and yellow pepper between them.
- In a small bowl, combine the garlic, ginger, lime juice, and olive oil and season well.
- Spoon the dressing over each piece of fish.
- Fold up each baking paper parcel tightly, place on a baking tray, and bake for 25-30 mins until the fish is cooked and the spinach has wilted.
- Meanwhile, boil the rice for 15 mins until tender.
- Drain and serve with the fish parcels, garnished with coriander and lime wedges.
