Thyme-roasted radishes

  • 2 x 240g packs radish, trimmed, larger ones halved
  • 1 tbsp olive oil
  • 6 thyme sprigs, leaves picked
  • 2 bay leaves
  • 35g wild rocket leaves

For the sauce

  • 125ml (4fl oz) crème fraîche
  • 100g (3 1/2oz) blue cheese, chopped
  • handful chives, snipped, plus extra to garnish


  1. Preheat the oven to 180°C (gas 4) and 160°C (fan). Toss the radishes with the oil, thyme, and bay leaves in a roasting pan; season. 15 minutes of roasting
  2. Make the sauce in the meantime. Warm the crème fraîche gently in a saucepan over low heat. t. Add the blue cheese and chive, stirring just until incorporated. s. Pour into a small dish.
  3. On a large serving plate, arrange the rocket. Sprinkle the radishes and additional chives over top. Serve with a dipping sauce of blue cheese.
