1 citrus fruit of your choice (such as orange, grapefruit, lemon, or lime), sliced or segmented
Additional honey, for serving
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, whisk together the yogurt, egg, honey, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few lumps are okay.
Heat a non-stick pan or griddle over medium heat. Use a 1/4 cup measure to scoop the batter onto the pan. Cook the pancakes until bubbles form on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.
Repeat with the remaining batter.
Serve the pancakes hot with citrus fruit slices or segments and additional honey (if desired). Enjoy!
