Yogurt and honey pancakes with citrus fruit recipe
Ingredients:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup plain yogurt
- 1 egg
- 2 tablespoons honey
- 2 tablespoons melted unsalted butter
- 1/2 teaspoon vanilla extract
- 1 citrus fruit of your choice (such as orange, grapefruit, lemon, or lime), sliced or segmented
- Additional honey, for serving
Instructions:
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, whisk together the yogurt, egg, honey, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few lumps are okay.
- Heat a non-stick pan or griddle over medium heat. Use a 1/4 cup measure to scoop the batter onto the pan. Cook the pancakes until bubbles form on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.
- Repeat with the remaining batter.
- Serve the pancakes hot with citrus fruit slices or segments and additional honey (if desired). Enjoy!
